Build-your-own macaroni and cheese restaurant coming to downtown Denver, Boulder, Stapleton

DENVER — Ready to eat macaroni and cheese just the way you like it?

I Heart Mac & Cheese, a fast-casual restaurant that makes customizable, build-your-own mac and cheese, announced plans to open locations in Boulder, Stapleton and downtown Denver.

A company spokesperson said the first location will open in 2020, but could not confirm where.

Diners have the option to choose from traditional pasta bases or more health-conscious one, like quinoa, broccoli, cauliflower and gluten-free pasta. In addition to the pastas, you can also order grilled cheese sandwiches. The brand recently announced a new vegan menu through a partnership with Beyond Meat.

In addition to the customizable options, the menu also includes specialty items like baked chicken parmesan, baked meatball parmesan, pepperoni pizza and lobster and white truffle mac and cheese. Desserts and soups are also available.

I Heart Mac & Cheese, which has a home office in south Florida, announced this development agreement with Full Circle Restaurant Group on Oct. 31. Full Circle Restaurant Group is led by Vu Tran, a military veteran and entrepreneur.
