Flagstaff House chef Chris Royster is now a Chopped champion

BOULDER, Colo. -- A chef at Flagstaff House in Boulder is a Chopped champion.

Chef de Cuisine Chris Royster competed in the Beast Feast episode that aired last week.

His dishes were Chicken Liver Rillette with kale mostarda, pickled kale, and toasted sevkac; Spicy Goat Ragout, with curry cashew and butternut squash puree and yogurt raita; and Roasted Pork and Maple Ice Cream with Rolled-Up Apple Pie, candied bacon caramel, and mascerated figs.

Royster wasn't intimated by the challenge of using a whole animal in one round.

"I love to use game animals as much as possible," Royster said. "I always loved venison and rabbit growing up, so I like to incorporate those into my menu whenever possible. When it comes to food, I love to take classic dishes and recreate them, anyway I can."

Royster has worked at several Colorado restaurants including Red Rocks Amphitheater, Zucca and The Huckleberry Café.
