Frozen Kiwi Margaritas Are Perfect For Summer

When the weather is warm and sticky, nothing beats a frozen margarita — especially one that’s a bit different from your standard lime-flavored drink. We recently learned of a new margarita recipe that puts kiwis front and center, and my margarita-loving heart simply had to try it.

This Frozen Kiwi Margarita recipe is courtesy of Zespri SunGold Kiwifruit and Chef Stephen Barry. Along with the kiwi, you’ll also need tequila, Cointreau, lime juice and grenadine syrup to blend up this frozen drink.

While it calls for two Zespri SunGold kiwis, you can use any kind of kiwi if you can’t find the SunGolds at your local store.

Zespri claims the SunGold kiwis are sweeter than green kiwis and taste like a cross between a mango and a strawberry, so keep in mind that the flavor you get from the margarita may differ depending on the type of kiwi you use.

The flavor will also differ depending on the brand of tequila you use and if you use Cointreau or a different orange-flavored liqueur. I used Cointreau and my favorite tequila, Altos 100% agave. I also used the SunGold kiwis.

While it’s a bit more complicated than a standard on-the-rocks margarita because you have to blend together a variety of ingredients, it’s worth the effort. The kiwi complements the orange flavor from the Cointreau and the fresh lime juice and grenadine, giving you multiple flavors all at the same time.

It tastes like a mixed-fruit margarita, with subtle hints of fruity flavors. And as a bonus, it’s pink!

Frozen Kiwi Margarita

Ingredients:

3 oz. (1/3 cup) tequila
1 oz. (3 tbsp) Cointreau, or other orange-flavored liqueur
6 oz. (3/4 cup) fresh-squeezed lime juice
2 oz. (1/4 cup) grenadine syrup
2 Zespri SunGold Kiwifruit
Sea salt (for the rim)
1 lime wedge
Ice cubes
Sliced SunGold Kiwifruit (for garnish)

Instructions:

Place sea salt in a shallow saucer. Wet the rims of two margarita glasses with the lime wedge, and dip rims in the salt.

Place the ice, tequila, Cointreau, grenadine and lime juice in a blender and blend well.

Slice the kiwi into halves and spoon the fruit into the blender. Blend just until combined. Be sure not to over-blend, as crushed kiwifruit seeds can taste bitter.

To serve, pour into prepared margarita glasses and garnish with gold kiwifruit slices. Serves two.
